Tea sandwich recipes
Cucumber Mint Tea Sandwich Recipe
Recipe Type: Sandwich, Afternoon Tea & High Tea, Poultry
Yields: 8 whole sandwiches
Prep time: 10 min
Ingredients:
1/2 seedless cucumber, peeled and very thinly sliced (about 32 slices)
1/4 cup loosely packed fresh mint leaves, rinsed, spun dry, and chopped fine
1/4 cup unsalted butter, room temperature
1/4 cup cream cheese, room temperature
16 slices best-quality white bread*
Salt to taste
* Choose the best-quality white or wheat bread as possible. Never serve end slices. Freezing the bread before cutting and then spreading makes for easier handling.
Preparation:
Place cucumber slices between layers of paper towels to remove excess moisture.
In a small bowl, combine mint, butter, and cream cheese; spread on one side of each slice of bread. Lay cucumber slices onto the buttered side of 8 slices of bread. Sprinkle with salt. Top with the remaining slices of bread, buttered side down.
Carefully cut the crusts from each sandwich with a long, sharp knife. Cut the sandwiches in half diagonally and then cut in half again. Decorative shapes can be made with cookie cutters.
Yields 8 whole sandwiches or 16 halves or 32 quarters
This is a delicious chicken tea sandwich recipe that is always a favorite.
Chicken Curry Tea Sandwich
Recipe Type: Sandwich, Afternoon Tea & High Tea, Poultry
Yields: 8 whole sandwiches
Prep time: 10 min
Ingredients:
2 cooked whole chicken breasts, finely chopped
1/4 cup finely-chopped nuts
4 celery stalks, finely chopped
Salt to taste
Mayonnaise (just enough to moisten)
Curry powder or paste to taste
16 slices best-quality white bread*
1/2 cup unsalted butter, room temperature
* Choose the best-quality white or wheat bread as possible. Never serve end slices. Freezing the bread before cutting and then spreading makes for easier handling.
Preparation:
In a large bowl, combine chicken, nuts, celery, salt, and mayonnaise; stir until well blended. Add curry powder or paste (Remember, a little goes a long way with curry - be careful).
Spread one side of each piece of bread lightly with butter. Top the buttered side of 8 slices of bread with some of the chicken mixture and top with the remaining bread slices, buttered side down.
Carefully cut the crusts from each sandwich with a long, sharp knife. Cut the sandwiches in half diagonally and then cut in half again.
Yields 8 whole sandwiches or 16 halves or 32 fourths.
Making Sandwiches Ahead of Time:
If you need to make tea sandwiches in advance and need to keep them from drying out, cover them loosely with a sheet of wax paper and then place a damp kitchen towel over the wax paper (never place a damp towel directly on top of the bread because the sandwiches will become soggy). Refrigerate.
When ready to serve, remove from refrigerator. Uncover sandwiches just before serving.

Cherry Puffs
Great recipe to go with black tea or Kenya tea from the book The World in your Teacup.

9 oz. pitted frozen cherries, thawed and drained
3 tbls. Black cherry jam or
preserves
¼ tsp. almond extract
2 10 ounce packages butter puff pastry shells
2 tbls. Almonds, ground
Powdered sugar for tops of puffs (optional)
Oven 400 degrees. Bake shells according to package
directions and allow to cool. While
baking combine cherries and cherry conserve together in a saucepan until warm
and mixed well. Take off heat and add
almond extract. Spoon a few ground almonds into each cooled shell and then
spoon cherry mixture on top of the almonds.
Sift powdered sugar on top if you like.
Serve warm or at room temp.

Fill my cup, Lord
After reading a couple of devotions from this book along with a cup or two of tea I thought it would be a great book to pass along to my fellow tea drinkers.
Some bits of the devotion entitled A cup of Service. The Lord's blessings flow freely along with two important acts on my part.
Surrender and Serve. We need to surrender our lives to Jesus. We develop a taste of service only as we develop a taste of Jesus. We learn from him and find out what it is like to have our cup filled with His blessings. When we come to the Lord in prayer we are growing in compassion, understanding and willing to serve. True service is when we don't respond because of guilt or pressure but out of love and caring. We see the need and we act upon it.
Fill my cup, Lord
I hold it up to you with outstretched hands,
My heart parched and thirsty for your living water.
Fill my cup with your love, Lord.
Help me to feel your hands holding mine,
feel your arms around me, feel your love empowering me.
Fill me with quietness and encouragement and trust.
Help me to live for you when trials, difficulties, and storms hit me and those I love so deeply.
Help me not to give up when giving up seems easier.
Help me to trust you when I don't feel like trusting anymore.

Tea at assisted livings
We have two teas this month. We just had one last Tuesday and it was so much fun meeting 10 new women over tea. They so enjoyed themselves and so did we! We even had a woman who said she did not like tea and by end of tea she had tried two and decided the black tea was good! I was excited to see her enjoy tea.
I shared one of my prayer pillows I made for one of the Tea Bingo prizes and the woman who won it just loved it. You could tell she was somebody who prayed. It was so much joy to have her receive this prayer pillow. It was a blessing to her and to me.
God was present and it was another blessed tea at the assisted living in Hugo, MN.
We are off to another tea after church tomorrow in Prior Lake. We were there this past February and excited to see some of the women again and meet some new. Praying God will show his presence there with all of us. Pray we can touch the women there with tea and God's word.

June Iced Tea Month!
June is National Iced Tea Month! An American favorite, iced tea makes up about 85% of all tea consumed in the US, so make sure you have some delicious offerings. A great substitute for sugary sodas and juices, iced tea is refreshing and needs little to no sweetening if made properly. Also, remember you can do some great herbal frozen popsicles for the kids this summer!

Sola scriptura is the belief that the Scripture is the final and only infallible authority for the Christian. It comes from the Latin word sola. This denotes "alone," "ground," "base." The word scriptura means "writings"-referring to the Scriptures. Sola scriptura means the Bible is complete, accurate and authoritative. The Apostle Paul put it this way: "All Scripture is God-breathed and is useful for teaching, rebuking, correcting and training in righteousness." (2 Timothy 3:16)

Genmaicha Green Tea
Long ago when times were tough in Japan, tea was precious enough to necessitate a filler. Genmaicha-style tea was born. Green tea mixed with “roasted brown rice.” Sometimes, a few grains may snap and crackle when the rice is roasted and some called it “popcorn tea.” "Dieter's tea" is another name because the addition of rice gives some people the feeling of satiation, of fullness.
Genmaicha is also well known as the “people’s tea.” It has certainly become a beloved tea worldwide.
We say the proof is in the cup… Just steep a pot, sit back and breathe in the heady, toasty soul-warming aroma of fire-roasted brown rice. Then sip this unique tea and discover both the fresh flavor of toasty grain and the subtle sweetness and alluring flavor of green full-leaf Sencha tea.

Berry Tea
You can substitute Jasmine Green tea and/or a tropical black tea for the gunpowder green tea and Assam black tea.
Prep Time: 5 minutes
Cook Time: 3 minutes
Total Time: 8 minutes
Yield: About 35 cups
Ingredients:
- 1/2 cup loose green tea, preferably gunpowder green tea
- 1/2 cup loose black tea, preferably Assam black tea
- 1/8 cup chopped dried cranberries
- 1/8 cup chopped dried cherries
- 1/4 tsp granulated dried orange peel
Preparation:
- Mix all the ingredients by shaking them in a glass jar with a lid.
- For each cup of tea you plan to brew, measure out 1.5 to 2 tsp. of tea mix (or 3 to 4 tsp. tea mix per cup for iced tea) and place it into a teapot or a glass measuring cup.
- Heat the appropriate amount of filtered water to 180 degrees (simmering) and pour over tea mix.
- (Optional) Stir or mix the tea as it begins to steep.
- Steep three minutes.
- Strain into a tea cup, pouring it through a strainer or a #2 or #4 coffee filter is steeping in a measuring cup.
- If desired, you can warm up the filtered tea in the microwave briefly.
- (Optional) Use sugar, stevia, or honey if you would like a sweeter tea.
- (Optional) If the tea is brewed double strength, you can pour it over ice after adding a sweetener.
- (Optional) Compost the used filter with tea mix.

Tea Smoothie
2 tsp. loose tea- apple cinnamon or any other flavor
2 cups of ice cream or yogurt
1/4 tsp cinnamon
Mix loose tea with ice cream or yogurt along with cinnamon in a blender. Pour into a tall glass, garnish with whipped cream. One serving

Iced Rooibos tea
For one cup of iced Rooibos tea
1 tsp. of loose Rooibos Tea
Boiling water
Pour boiling water over loose tea and steep for about 5 - 7 minutes. Cool and then pour over ice cubes.
You can add a bit of sugar or lemon if you'd like but most Rooibos teas have flavor. I tried this with our Tealightful Treasures Green Rooibos Peach and it was yummy! Enjoy!
